  1. Perfect Pairs – Apple and Mint Jam for Lamb

    I have a confession.  In my youth I had been seen, on a few occasions, dipping a salty chip into an ice-cream shake before eating it.  You’re either thinking, “Oh my word…YUCK!” or “Oh my word…ME TOO!”  There was just something amazing about the salty and sweet contrast, the teasing of the tasebuds, if you will.

    Now that my tastes have matured I look for more refined pairings for my palette.  And it’s undeniable that some foods just go together; like strawberries and balsamic vinegar, cranberries and turkey, and apple and mint and lamb.  Mark, co-owner of Cream, recently shared with me this simple but wonderful canapé recipe; Roast Lamb Canapés with Apple and Mint Jam for Lamb.  Enjoy!

    ROAST LAMB CANAPES WITH APPLE & MINT JAM FOR LAMB

    - Roast some lamb your favourite way. For Mark, it’s cutting pockets to poke in cloves of garlic, throwing into an Oven bag with some fresh rosemary. Don’t overcook keep your roast juicy. Slice – not uniformly.

    - Slice a crusty baguette diagonally.

    - Layer lamb on baguette slices. Top with a decent spoon of Cunliffe & Waters Apple & Mint Jam for Lamb. A sprig of fresh mint or Rosemary looks great on top.

    If you’re like me, watching loved ones open their gifts is a quintessential Christmas experience but that says nothing about the stress of finding the “right gift”.  No matter what it seems like there is always SOMEONE every year for whom I struggle finding one.   It’s the person who has everything, or doesn’t want anything, or who always gives the BEST gifts, or whose style is completely different, or this year, it’s my foodie friend who always amazes with her dazzling dishes and abounding knowledge of gastronomy.

    But I may be in luck, which is good news for my foodie friend.  In addition to the wonderful (and customized) gourmet hampers at Cream, this season they’re also one of a limited group to be stocking Cunliffe and Waters Mount Mary Cabernet Jelly, which I might boldly proclaim to be ‘The foodie Christmas gift of this year’.

    This limited edition jelly is made from the gorgeous and exclusive Mount Mary Quintet Cabernet in the Yarra Valley.

    There are so many special things about Cunliffe & Waters.  In fact, their summerberry jam is probably my first real addiction, for which I thanked Amanda Cunliffe (pictured below with Mark, from Cream) on a recent beautiful visit to Healesville with Mark and Esme.

    The Mount Mary Cabernet Jelly is a product of a collaboration between two of the Yarra Valley’s finest producers, Mount Mary Vineyard and Cunliffe & Waters.  And what a product it is.

    Mark is so in love with this jelly that he wanted to share his excitement with you in a quick video.

     

    I know my foodie friend will be delighted with this gift because the magic of the jelly is every bit as much about the lovely people who make it and the love and care that goes into it, as it is about the top-notch, irreplaceable ingredients.  And that’s something that’s important to both of us, at Christmastime and all the year round.
